Bento Lunch #273: Birds Nest Cups

I started my pinterest boards yesterday, finally! I have been contemplating about it and procrastinating at the same time. So much more to learn and I am definitely taking baby steps as I'm not a natural tech wizard :)
This is a recipe that I found awhile back but did not follow proper instructions when making it. It turned out o.k but taste great.

Couple of birds nest, veggie crisps and seedless red and green grapes. Linking to Bentoblognetwork.com

Ingredients for birds nest-
12 turkey bacon
1.5 cups egg substitute
6 tbs shredded Mexican cheese blend
1 tbs minced parsley (I used organic oregano)

1) Cook bacon medium heat, partial set and not crisp
2) Coat muffin cups with spray. Wrap 2 bacon stripes around the inside of cup ( I used 1 stripe, in future will try 2)
3) Fill each muffin cup with 1/4 egg substitute, top with cheese
4) Bake 350F for 18-20 mins, cool for 5 mins before removing from pan
5) Sprinkle with parsley

Here are the items that I used to make this lunch.

Bento Lunch #272: Earth Day Bento

April 22 is International Earth Day, a time to reflect on what each of us can do for our planet.
Throughout our son's school years we have tried to do as much reducing, reusing and recycling; reusable lunch boxes, juice containers, silicone molds, picks, cloth napkins, just to name a few. While usually not included in pictures, today's picture shows one of the  napkins/cloths in the yellow container and a blue juice container that I send with him.

  • Top to bottom- Organic oatmeal raisin granola bar (Cascadian Farm Organic) topped with organic fruit leather 'RECYCLE' alphabets.
  • Organic green and orange pepper slices.
  • Round shaped sandwich with colby recycling symbol.
  • Rose cut from strawberry, seedless green and red grapes.
  • Organic grape juice in juice container and towel in reusable case.

Bento Lunch #269: Hotdog and Cheese

Happy Friday! I am running low on groceries and don't intend to go grocery shopping since it's close to the weekend. Besides, I don't usually cook during the weekends unless my wonderful hubby wants to cook. He makes breakfast on Sundays though.
I am using a new lunch box that I found at Marshalls couple of weeks ago. It is perfect size for N's lunches and has a build in divider, Sistema is the brand, made in New Zealand. Most importantly, it does NOT have the weird plastic smell that I dislike. Have a wonderful weekend everyone :)

  • Left- All natural hotdog and string cheese.
  • Right- Yogurt stars, raisins, organic baby carrots and cucumber slices.
Here are the items or similar that I used to make this lunch.

Bento Lunch #268: Puzzle lunch

Made this puzzle with different kind of bread today for a change. Cheddar cheese bread is quite a big hit in our home lately. I'll be including cucumber in N's lunches often since he loves them and I have never seen him that keen on any veggies before. Well, as long as he eats them, that's all that matters.

  • Left- Puzzle shaped deli ham and cheese sandwich.
  • Right- Cucumber slices with strawberry star insert, teddy grahams, strawberry slices.
Here are the items or similar that I used to make this lunch.

Bento Lunch #267: Tortellini and Smiley Strawberry

This is a quick put together bento. I thought of asking N to have school lunch but changed my mind last minute. The strawberry face was inspired by artistic Mommy Kiki Can!
Yesterday, N finished all his cucumber slices and I was super excited. It's the first time that he finished his veggies!

  • Left- Cucumber slices, Smiley strawberry face with some sliced strawberries at the bottom
  • Right- Cheese tortellini with colb jack shredded cheese.

Bento Lunch #266: Simple Happy Bears

We had a wonderful Easter weekend with family and friends. Enjoyed the food and ate a lot as usual, but spending quality time with everyone and watching the kids play and had fun was the greatest!
I have not made Nutella sandwiches for school lunch in a long time. He was so into them when he was in Kindergarten, all he wanted was Nutella or honey sandwiches. He prefers cucumber without skin and seeds and using a mini cookie cutter does the job of getting the seeds out.

  • Top, left to right- Hard boiled egg with nori accent, cheddar crackers, bear shape cut into cucumber slices and spinach.
  • Bottom, left to right- Seedless green grapes, Nutella sandwich (halved), bear shaped colby jack cheese.
